What Is Palmyra Palm Sugar? (And Why It's Not the Same as Coconut Sugar)

If you've only ever tried coconut sugar, you haven't actually tried palm sugar yet.

Palmyra palm sugar is rarer, harder to produce, and — once you taste it — impossible to mistake for anything else. Here's what it is, why it's different, and how to use it.

Palmyra Palm Sugar vs. Coconut Sugar: What's the Difference?

They get confused constantly, but they come from different trees entirely. Coconut sugar is made from the coconut palm and tends to taste fairly one-note. Palmyra sugar comes from the Palmyra palm (Borassus flabellifer) and is prized for a deeper, more complex flavor — think melted caramel, toasted butterscotch, and a whisper of natural smokiness.

It's also simply rarer. Palmyra palm sap is harder to harvest and process, which is exactly why so few brands offer a genuine, unrefined version.

How It's Made

Ours is collected and boiled the traditional way, over an open wood fire — no shortcuts, no refining, no bleaching. That slow process is what preserves the natural minerals and the deep caramel character you can actually taste. No added cane sugar. No preservatives. No artificial color.

Is Palmyra Palm Sugar Healthier Than Refined Sugar?

It's unrefined and naturally low-GI (glycemic index), meaning it doesn't spike blood sugar the way refined white sugar does. It's not a "zero-calorie" sweetener — it's real sugar — but if you're looking to move away from heavily processed sugar without losing flavor, this is the trade worth making.

3 Ways to Use It

In your coffee or tea: Grate or shave a small piece straight into your cup. It pairs especially well with the dark, chocolatey notes of Fine Robusta.

In cocktails and mocktails: Melt equal parts palm sugar and warm water for a rich, golden simple syrup — adds real depth to any drink.

In Thai cooking: This is the ingredient behind authentic curries, marinades, and dipping sauces like nam jim. If your Thai food at home has ever tasted flat, this is usually why.

Where Ours Comes From

Our Palmyra Palm Sugar is part of The Culinary Reserve, sourced through our trusted network of Thai producers using traditional harvesting methods passed down through generations — the same community-first approach behind our Fine Robusta coffee.
